Ratlam's most beloved namkeen, the laung sev, is built on one ingredient most makers leave out — whole clove. Our besan is stone-ground in small batches, bound with a Malwa spice mix ground fresh that morning, and pressed into fine strands through a hand-held sancha. We fry in small kadhais so the oil stays clean and the sev turns a deep, even gold. The clove arrives late — bloomed into the spice mix so its warmth carries through every strand without ever turning bitter. No preservatives, no artificial colour, no shortcuts.
